Spiked Black Forest Cake

Hey everyone! First blog post ever…cheers! And no celebration is complete without cake. Like really, really good cake.

So I got out my mixing bowl and began to make my go-to Chocolate Cake. I look in the freezer for butter, and I see the can of orange peels. My mind immediately goes to the Lindt chocolate bars with oh-so-wonderful strips of orange peel. Ah, orange peel would be lovely in this cake. I would name it “Spiked Black Forest…” that’s it! It needs a liqueur to draw out the orange, mingling it with the chocolate. And so it came to be.

This cake is so good. A bit fancier tasting than your typical chocolate cake, with almost zero extra effort. Works for me! How about the recipe now?

Spiked Black Forest Cake

Blend
  1. 3 cups (30 oz.) Black Beans
  2. 5 Eggs
  3. 1 cup strong Coffee
  4. 1 TBSP. Vanilla
  5. 3 TBSP. Whiskey
  6. 2 TBSP. Orange Peel, grated
Beat
  1. 3/4 cup Butter
  2. 5 Eggs
Dry
  1. 3/4 cup Cocoa Powder
  2. 1/3 cup Coconut Flour
  3. 1 TBSP. Stevia
  4. 1 1/2 tsp. Baking Powder
  5. 1 1/2 tsp. Baking Soda
  6. 1 tsp. Salt
Instructions
  1. 1. Blend together first ingredients until creamy.
  2. 2. Add eggs into butter one at a time beating for 30 sec.
  3. 3. Pour bean batter into butter mixture and mix.
  4. 4. Add in dry ingredients and mix well.
  5. 5. Pour into two round 9" pans. Bake at 350°F for 30 min.
Assembly
  1. 1. Frost a layer of Coffee Cream on one cake and top with Cherry Filling (not too much or it will run out).
  2. 2. Set second cake layer on top and frost cake.
  3. 3. Garnish - or heap, it's up to you - with Cherry Sauce.

Cherry Sauce

Ingredients
  1. 1 1/2 cup Sour Cherries, thawed
  2. 1 cup Sour Cherry Juice (from thawed cherries)
  3. 1/2 tsp. Xantham Gum
  4. 1/2 tsp. Stevia
  5. 1/2 tsp. Almond Flavor
Instructions
  1. 1. Pour cherry juice into a kettle and whisk in xantham gum.
  2. 2. Bring to a boil, whisking occasionally. Boil until thickened.
  3. 3. Take juice off of heat and whisk in the rest of the ingredients.

Coffee Cream

Ingredients
  1. 1 package Cream Cheese
  2. 3/4 cup Heavy Cream, whipped
  3. 3 TBSP. Coffee
  4. 1 tsp. Instant Coffee
  5. 1 tsp. Vanilla
  6. 1/2 tsp. Stevia
Instructions
  1. 1. Beat cream cheese until creamy.
  2. 2. Dissolve instant coffee in coffee.
  3. 3. Add coffee, vanilla, and stevia to cream cheese and beat well.
  4. 4. Fold in whipped cream.
