I eat breakfast for lunch…and dinner. Yeah, it’s that good. Especially when you have these delicious waffles that you can do almost anything with. I topped these with a fresh Red Raspberry syrup, Maple Ice Cream, and a sprinkle of pecans. Tummy Tucking Ice Cream from the Book would be great. What a delightful start to the morning!
As good as waffles are in the morning, I had to try a waffle sandwich for lunch. I skipped the stevia and vanilla for these waffles and filled my sandwich with a grilled burger and all the works.
These waffles couldn’t be easier to make, as everything gets dumped in the blender and whizzed up in a few seconds.
And here’s the recipe:
- 1 cup Yogurt
- 1/2 cup Egg Whites
- 2 cups Rolled Oats
- 1/8 tsp. Stevia
- 1/2 tsp. Baking Powder
- 1/2 tsp. Baking Soda
- 1 tsp. Vanilla
- 1. Dump everything in the blender and blend away! The batter should be fairly thick.
- 2. Heat the waffle iron. Brush a little oil on the grid to keep the waffles from sticking.
- 3. Pour the batter on the iron, and cook to desired crispiness.
- 1 Large Waffle
