Vanilla Waffles

I eat breakfast for lunch…and dinner. Yeah, it’s that good. Especially when you have these delicious waffles that you can do almost anything with. I topped these with a fresh Red Raspberry syrup, Maple Ice Cream, and a sprinkle of pecans. Tummy Tucking Ice Cream from the Book would be great. What a delightful start to the morning!

As good as waffles are in the morning, I had to try a waffle sandwich for lunch. I skipped the stevia and vanilla for these waffles and filled my sandwich with a grilled burger and all the works.

Oh my goodness. So good. As far as eating goes, a half sandwich is quite filling. Serve it with Iced Coffee or Kombucha and you have the most delicious meal on your hands – right there.

These waffles couldn’t be easier to make, as everything gets dumped in the blender and whizzed up in a few seconds.

Vanilla Waffles

Ingredients
  1. 1 cup Yogurt
  2. 1/2 cup Egg Whites
  3. 2 cups Rolled Oats
  4. 1/8 tsp. Stevia
  5. 1/2 tsp. Baking Powder
  6. 1/2 tsp. Baking Soda
  7. 1 tsp. Vanilla
Instructions
  1. 1. Dump everything in the blender and blend away! The batter should be fairly thick.
  2. 2. Heat the waffle iron. Brush a little oil on the grid to keep the waffles from sticking.
  3. 3. Pour the batter on the iron, and cook to desired crispiness.
Yield
  1. 1 Large Waffle
